Teacher Week: Tuesday

I'm back today to talk about my favorite make ahead meals. If you want to join up with Teacher Week, head to Blog Hoppin' and find out what to do!


I will start by saying that I don't really do make ahead dinners. I'm only now beginning to experiment with Crock Pot recipes, and it still makes me nervous to leave it on while I'm gone during the day.

However, I love doing make ahead lunches. It's a struggle to wake up at 5:15am everyday. I shower at night, Mr. R handles the dogs in the morning, and I still have a hard time getting ready to leave by 6:45am. To save myself even more time in the morning, I make all of my lunches on Sunday. 

Here's what I make:

-Salads: I take a salad for lunch everyday. Usually I go to Aldi on Sundays and gather all of my produce. I use lettuce, carrots, celery, green bell peppers, onions, and cherry tomatoes. Then on the day that I eat my salad, I add sunflower seeds and a little bit of Ranch. If I have a busy Sunday and can't find the time to make my salads, I buy the pre-maid mix (either Dole or Wal-Mart brand). My favorite is the Southwest Chopped Salad. YUM!

-I separate my snack food into baggies for each day. I'm on a Ranch Quakes kick right now so I split them into five servings for my week.

-I make my yogurt easy to grab each morning by putting it in the front of my fridge. I usually partner it up with Honey Bunches of Oats chocolate granola. 

But I do love a good meal that makes lots of leftovers. Here's two of my favorites:

  1. Ahhhh. Leftovers. A staple at my house. I call them "Mystery Meals" and my kids actually get EXCITED to have leftovers. Lol.
